 The chemical structure of niacin is similar to the amino acid trytophan and the human body can convert some niacin from trytophan. Niacin is most abundant in high protein foods such as meat, fish and nuts.

Niacin functions in over fifty metabolic reactions. It plays a key role in the following processes, all of which are important in the release of energy from macro-nutrients:

• Glycolysis; the metabolic pathway that converts glucose.
• The Krebs Cycle; a series of chemical reactions, which is of central importance in all living cells that use oxygen as part of cellular respiration.
• The Hexose Monophosphate Shunt; a process that generates NADPH and pentoses.

Nicotinamide is also needed in the deamination of amino acids and in the metabolism of fatty acids. By playing a role in the formation of red blood cells, steroids and energy production within cells, niacin is vital in maintaining cellular integrity.
